With the perfect mix of grated carrots, warming spices, and just the right amount of sweetness, this cake always came out soft, moist, and wonderfully fluffy. These days, I love baking it as a simple tea-time snack that everyone in the family enjoys. Most of the time, we eat it just as it is, light, moist, and full of flavor, but occasionally we’ll dress it up with a fresh cream topping for a little extra indulgence. The traditional combination pairs it with a slightly sweet cream cheese frosting. Either way, it’s a timeless recipe that never disappoints and feels a little bit like home with every bite.
